Ingredients

Apricots, chestnuts, agar agar, good quality soya milk, rice syrup, ground almonds, whole almonds & rice syrup

Soak apricots. Place (with soaking water) in pressure cooker, add a pinch of salt and the chestnuts. Pressure cook for 30 minutes. Heat up soya milk with some agar agar, stirring constantly so it doesn’t burn. Cook until the agar agar has dissolved (after about 10 minutes). Blend the apricots & chestnuts & then add to the soya milk and agar agar. Add some ground almonds and some rice syrup to taste. Pour into moulds and allow to set & then decorate with toasted almonds.

Yo!

I spent the day at home today & it’s so nice to just have time to take time about cooking and to feel not pressure about having to prepare food by a certain time.

Breakfast

No breakfast as I woke up a little later than normal and wasn’t hungry

Lunch

A yummy miso soup made with onion, carrot, shiitake mushrooms, tofu & dulse

Brown rice croquettes

Grain coffee with soya milk

Dinner

Tofu pizza…mmmm!

Apricot & chestnut dessert which I made up (& will post the recipe after I’ve posted this :O)

Grain coffee & soya milk

Wine

Today’s food was really delicious but I am really looking forward to eating more simply tomorrow. It feels like it really is  a balancing act between eating very simply and eating wider foods (if you know what I mean!).

I had some non macro friends round for dinner tonight and they really enjoyed the food I made. It’s so gratifying to being able to feed people nutritious and delicious food. I love sharing food, such a lovely way to come together!

Hey!

How’s it hanging?

Breakfast

Home made oat milk with a drizzle of shoyu

Lunch

No lunch for moi. I wasn’t hungry!

Dinner

Split pea soup, rice croquettes, stir fried kale with ginger juice, roasted parsnips, pumpkin & sunflower seeds and a couple of brazil nuts (eeek – tropical nuts are not so good!), sauerkraut, miso mushrooms & corn

Bancha tea

Grain coffee with soya milk & rice syrup (I think I had too much salt iat dinner which made me crave yin!)

I cooked for my bro & his girlfriend tonight so I added a bit more seasoning than what I normally would. I’m happy to report that they really enjoyed it, woo hoo! :) That was the first time I’ve ever cooked macro food for them so I’m pleased with how it went. I reckon it may have changed some of their preconceived ideas about macrobiotics :O) :O)

Now it’s zzzz time!!

Zzzzzzzzz!

Hello :O)

Ahh I’ve had the nicest and funniest evening…my brother & his girlfriend are staying with me at the moment and they have just taken a bag of chocolate coated nuts and a bottle of flavoured water to bed with them, after asking me many questions about yin and yang :O) ha ha!!! It all seems very paradoxical!!

Breakfast

Miso soup from yesterday

Mmmmmochi!!

Women’s energy tea

Lunch

Buckwheat with gomasio, stewed carrot, leek & onion & sauerkraut

Dinner

White bait

Salmon, mange tout, baby corn & red cabbage

A little taste of scallop and monk fish

Red wine

I told a little lie this evening…we went to a lovely French restaurant, and pretty much everything on the menu seemed to involve an abundance of dairy (cream, butter). When I asked if it was possible to have it without they said it wasn’t…until I said that I was very allergic to dairy…he he. It did the trick!! :O) I wish I could have said that I was macrobiotic but I thought I’d spare myself the hassle.  :O)

Snacks/other

daikon pickle & a couple of brazil nuts. 1/2 pint ale, 1/2 pint of guiness

I had to have a snack as we didn’t end up eating dinner until soooo late and I’d had 1/2 pint of ale and felt so hungry.

Breakfast should be fun tomorrow!!

Howdy!

Guess what? The mochi was AMAZING!!! Yayyyy! I’m so happy I can make this as it’s so nourishing and delicious, and I think I’ll save myself a small fortune too (I’m not sure how much it costs where-ever you are in the world but it costs about £6 for a pack here in the UK which is just ridiculous).

I’m feeling really really good today. I love this new regime I have – eating at regular times, not eating sweets and not over eating, it all feels soooo right.

You know, I become more and more intrigued by macrobiotics by the day! It’s such amazing stuff to be learning about and to be experiencing. I thank my lucky stars for helping me discover something so honest and special.

Breakfast

Sweet rice with sweet chestnuts

Mochi with shoyu & rice vinegar

Grain coffee (1/4 of a cup)

Lunch

The most delicious miso soup I have EVER made (I’m not kidding!) made with onions, squash, chickpeas & wakame

Brown rice, aduki beans & wheat, roasted parsnips. sauerkraut, stewed carrots & corn

Bancha tea (1/2 a cup)

Dinner

Arame & onions, kidney beans & vegetables, arame wrap, brown rice with squash, red lentils, sauerkraut & cucumber

I could have had a dessert tonight but I turned it down…yes, you are not seeing things, I TURNED DOWN A DESSERT! I never thought I’d be capable of doing that, but I’m sticking to my plan of action because I actually have no choice now, after learning what I have!

Lets us obey nature and then we will be truly happy. Obey, obey!!!

Love, light & obedience!!

Hola!

I decided to start the day with a healing drink rather than breakfast as I wasn’t hungry so I had:

Breakfast

Ume-sho-bancha drink (made with bancha tea, 1/2 an umeboshi plum & a couple of drops of shoyu) mmmm, this was yummy!

Lunch

Roasted sweet rice

Dinner

Barley with gomasio & some hijiki on rice crackers. Very simple but very delicious and I feel great for eating sooo simply :O)

Bancha tea

So, my plans for the next weeks leading up to Christmas is to be more focused with what I eat & to move my macrobiotic goal posts slightly. This will involve eating more simply, having only one dessert per week (yeah, can you believe it!), eating at regular meal times, not over eating, eating only when hungry, no snacking in between, having fish once a week & not having any flour products (unless making tempura).  It feels like it’s time to do this, not least because it’s part of my homework but also because I feel that my health will benefit greatly from it.

I quite like the idea of eating simply one day and then eating a bit wider the next day so maybe I’ll give that a go :)

I made some mochi tonight and can’t wait to try it tomorrow. Ahh, if it turns out well then I think I’ll have found a new hobby (making and eating mochi!!!) mmmm! And if it doesn’t turn out well, then I’ll still have a new hobby – trying to make mochi!! I might need to get some mochi making gloves or something though as I have a blister on my hand from my efforts this evening!!

Sweet mochi dreams
