Good evening!
What a wonderful day it has been
. I’ve been eating a bit lighter lately & not over eating and wow, what a difference it has made to my energy levels and my mood.
Over eating has been such a big issue of mine in the past, and it continues to haunt me. It’s been so interesting watching this and becoming more and more aware of it and how it effects me and keeps me within a particular emotional pattern or feeling. A couple of days ago I unearthed some issues I have with my past and now I see some things that need a bit of healing, particularly around issues related to guilt and shame. I see that I can use food to bury those feelings and keep them within the confines of my being, or I can use food in a way that will help me to address and release and overcome those feelings. Now I can see my picture more clearly, I have a choice – which is something I have often felt I didn’t have. Ahh, I love it when a realisation/step closer towards health & happiness is made. It makes me feel grateful to be alive!!
Anyway, enough of my food woes (yes, macro people have them too because we’re human!) and onto my food highlights for the day
Breakfast was some freshly juiced carrot, apple & celery
Snack – a date, cashew & raisin bar
Lunch – a soup made from millet, squash, carrots, onions & wakame followed by the most amazing dessert…made from chestnuts & melon. OMG! It was sooo good. I have to share this recipes because it was so nice and simple:
Ingredients: 1 cup of dried chestnuts (pressure cooked until soft), 1/2 a melon (I think this one was a gala melon, but I’m no melon expert and I can’t be 100% sure without getting up & checking which I’m not overly keen on doing right now!!).
Put melon into a saucepan and add a pinch of salt and enough water to cover. Simmer for 10 minutes until it’s soft. Add chestnuts and blend & there you have it, one very delicious dessert
Dinner
Millet burger, stuffed onions with seitan, home made sauerkraut,, boiled carrots & cucumber
Followed by chestnut, aduki & apple pudding
3 sweet things in one day…oops! Perhaps not so good for my kidneys or large intestine but definitely good for my soul!!!
(I can always find a great excuse why I should have a dessert!!)
Oh yes, I have another confession to make too, but I’ll say that for another time! Now, I must make my way to zzzz land to regenerate ready for another day of life!
I almost forgot, I made some seitan last night too & cooked it today. I’ll post a photo. Whenever I make seitan, I always think I must make it more often because I love it.
Ok, a long post from me…you see what happens when the liver energy starts flowing better…
